Spring has finally arrived and I could not be HAPPIER. I love seasons, but winter tends to last forever here in the beautiful state of Washington. Gray weather and rainy days aren’t my favorite, so I am always overjoyed when the sunshine makes a long awaited appearance. My husband and I have gotten outside for either a long walk or a bike ride every single day this past week. I feel like we have finally awoken from a long hibernation or something. Pathetic I know, but we tend to stay indoors out of the rain/snow in the winter and we get a little stir crazy, so we have been taking full advantage of the warmer drier weather lately.
When I think of sunshine and warm weather, a delicious, refreshing, lemon-y fruity something comes to mind. I am a sucker for anything lemon. Lemonade, lemon bars, lemon poppy seed muffins, lemon squeezed on salmon, I. Love. Lemon. I have a major sweet tooth, but I try to keep it under control when I indulge in treats by keeping them as healthy as possible, while still satisfying my craving.
This past week on the weekly dinner meal plan (find the weekly meal plan template here), I had a healthier version of mac n cheese that used greek yogurt planned, but because of a 24 hour firefighting shift that my husband had, I ended up not making the meal. So I was left with a massive container of plain whole milk greek yogurt. The greek yogurt itself is actually quite healthy if you’re okay with eating dairy, but I am not one to dig into plain whole milk greek yogurt. Thus arose a dilemma.
