Recently, my husband and I made the switch from eating a high meat and dairy focused diet to a plant-based diet. The health benefits of eating plant-based (or vegan) are numerous and I’m looking forward to seeing how our health improves and our energy increases over the next few weeks and months. As with switching any diet, though, it can be a bit overwhelming to learn how to cook a variety of completely new meals, all while balancing the normal life routines of work, exercise, appointments, and more. That’s why I’ve rounded up these make-ahead, freezer friendly, vegan breakfast lunch and dinner recipes. All you have to do is pick 1-2 breakfast recipes and 3-4 dinner recipes, set aside a few hours for prep, and freeze the meals to be used throughout the week. When switching diets, it can be easy to go out to eat because you’re crunched for time or too tired to cook, but that can add up quickly.
